Capriccio Grill Chef
With 14 years of culinary expertise, Isaac Pacheco joined The Peabody Orlando as chef of Capriccio Grill in 2010. Prior to joining the hotel, Pacheco was club chef d’ cuisine at the Fisher Island Club in Miami, Florida, where he was responsible for directing kitchen operations for three of the five venues on the island.
Pacheco’s interest in fine dining arose when he was only 14 years old. Since then, he has found himself leading some of the most notable kitchens including the Ritz Carlton Hotel and Fontainebleau Hotel in Miami, Florida and the St. Regis Hotel in Houston, Texas.
A native of Miami, Pacheco holds an associate’s degree in culinary arts from Johnson and Wales University.
